Feijoa Cake

With feijoa trees at their best right now (at least at the time of publishing this recipe!) heavily laden with their wonderfully delicious  fruit, I have included this amazing feijoa cake recipe.  Don’t let the simplicity of the recipe fool you; it tastes divine!   If you are having a dinner party, this can be served warm with a little whipped cream on the side.

125g soft butter
1 Cup sugar
2 eggs
1 tsp vanilla essence
1/2 cup milk
1 and 1/4 cups plain flour
2 tsp baking powder
Sprinkle of mixed spice or allspice
Up to 2 cups of peeled & halved Feijoa (cut each one in half then scoop them out with a spoon).
Brown sugar

Place all ingredients except for feijoas in a mixer bowl.  Beat on low speed to combine.  Increase speed and mix on medium for 3 minutes.  Pour into baking paper lined 20x30cm deep cake tin.  Place feijoas on the surface of the cake batter, pointed end down, and push down until top is level with cake batter.  Sprinkle with the brown sugar, or if you like, chopped walnuts (or both).  Bake at 180 degrees Celsius for 50 minutes or until cake springs back when lightly touched.  Serve warm or cold.

Feijoa Surprise

1 doz feijoas
2 Tbls sugar
I pkt jelly mix (raspberry, or your choice)

Half the feijoas and scoop out the filling into a pot.  Sprinkle over the sugar and add 1/2 or so of water.  Put on lid and simmer until feijoas are stewed.  Drain off liquid and place feijoas in a medium sized bowl.

Make up jelly according to packet directions.  Pour over feijoas and allow to set in fridge.

Chicken Curry on Rice

1 onion, chopped
˝ tsp crushed garlic, or as you prefer
1 tsp peanut butter
8 - 12 button mushrooms, sliced or cut in half
2 slices bacon, cut up
3 Tbls coconut
1 Tbls brown sugar
˝ tsp green herb stock, any herbs you like can be added. Remember the more you cook
                                    the stronger the flavour and you want a blend of tastes
2-3 pkts Maggi Cream of Chicken soup
1 Tbls Gregg’s Curry Powder
2-3 breasts of chicken, or 4 chicken thighs
Assortment of veggies, chopped as you like
4 beaten eggs, microwaved till cooked then chopped up; add Soya Sauce to flavour
˝ tsp salt
2 small fruit yoghurts
1 cup cream
1-2 cups of milk to fluid the mix, or use water
Add water to get the right consistency
Nuts, or what ever you like can be added so keep it new and try something each time you cook it

Cook the onion on high heat till done.  Add garlic, mushrooms, peanut butter, bacon, curry powder, herb, coconut, brown sugar, salt, and water to keep fluid. Mushrooms will soak up fluid, so watch.  Once it looks like it is nearly ready turn down to a low-medium heat.  Add yoghurt, cream, chicken, and Maggi soups.

Now simmer and keep at the right consistency until cooked.  The curry and Maggi Soups are where a lot of the flavour comes from, so test your mix until you can taste the flavours coming together.  You will learn to smell the difference once the aroma starts rising.  Add to a plate of cooked, fluffy rice.

Banana Cake

125 g butter
1 cup white sugar
2 eggs
3 bananas, mashed with a fork (aprox. 2 cups)
2 t baking soda
2 T hot milk
2 cups flour
1 t baking powder

Mix butter and sugar until light and fluffy.  Add eggs, then mashed bananas; mix really well.  Stir baking soda into hot milk and add to the mixture.  Fold in flour and baking powder.  Pour into a well greased 20-21cm tin with the base lined with baking paper.

Bake at 180c for 45-50 minutes, until the cake springs back when lightly pressed.  Cool for 15 minutes in the tin then carefully turn out and cool completely on a wire rack.  Ice with Lemon Icing when compltely cool.

Chocolate Lush Pudding

Chocolate Lush Pudding
2 oz butter
1/2 cup brown suger
1 egg
2 dessertspoons cocoa
1 cup flour
1 tablespoon baking powder (correct not a mistake)
1/2 cup milk
vanilla essence (couple of drops)

Cream butter and sugar, add egg then dry ingredients, vanilla and milk.  Make topping of 1/2 cup white sugar and 1 tablespoon cocoa. Sprinkle over batter and add 1 1/2 cups boiling water.  Bake 40 minutes at 350 degrees. Sauce will go to bottom and sponge will rise to top. Really yummy with cream, ice cream etc.

Best Microwave Cake

125g butter
1 1/2 cups sugar
2 tablespoons cocoa
1/2 teaspoon baking soda
1 cup hot water
1 1/2 cups self-raising flour
1/4 teaspoon salt
2 eggs

Put butter, sugar, cocoa, baking soda and water together in a large microwave-proof bowl.  Cook on full power 3 1/2  to 4 minutes, stopping once during cooking to stir.  Stir again and set aside for 8 minutes to cool.  Sift flour and salt together.  Beat eggs well.  Add beaten eggs to the cooled mixture.  Add flour all at once and beat until smooth.  pour mixture into once large or two small microwave-proof ring moulds.  Cook on full power for 3 to 5 minutes each or until risen and just sticky to touch.  Stand covered for 15 minutes before turning out.  Ice when cold.
